The classes given at la maison Depollier are tailor made to the client’s wishes. There is an opportunity to learn about what specially interests you most by discussing the content of the classes so as not to lose time over aspects you already know, don’t interest you or have no value in your own life style. No longer being part of a production line promotes your own unique individual flair and gives you the confidence to experiment.

The classes are always for small numbers of people (maximum six) and can be just for one person. They are generally arranged according to demand and the schedule, format and subject are discussed to suit the client. They can be casual for the relaxed client on holiday or designed to help a client in a specialised field of cooking to develop their skills, perhaps for their own work. They can range from three hours long to three weeks long. Classes can cover specific techniques, recipes, menus or diets, being held on the date and times at the convenience of the client as far as possible.

Requests are received with enthusiasm. There are so many fascinating dishes, skills and ingredients to try out, experiment and learn. Past courses have covered bread making, pastry making, sauces - their origins and history, the use of eggs in desserts, thai, moroccan, and vietnamese style cooking, mediterranean fish and shellfish preparation, and also making chocolates. The sample class section features a recreational provençal cooking day which shows in detail one class that some clients have done in the past.

Enquiries are followed up with a discussion about the subjects that are of interest and any previous experience the client has already. According to the client’s brief a class schedule is proposed with a price that includes the provisions, recipes, tastings (wine, olive oil etc), prospective visits (eg, local goat’s cheese maker, the local olive mill etc if desired), nourishment and refreshments of course!

Prices reflect the type of class and number of people participating. Day classes are usually priced at 500 euro for three or fewer people and 750 euro for 6 people. To have a price estimate for your brief please contact,

Bookings. No credit card facilities; payment to be made by cheque or cash. A 25% deposit is followed with the balance on arrival. Should it be necessary to cancel or transfer the date of a booking, any fees paid will only be refunded if notification is given in writing no later than two weeks before the start date of the class or course.
